I might make some if I can find some green hams for a good price. I checked one place last year and they could get me a case for about 16c a pound. I think it was two hams per case...I'm a fan of the country ham. Especially when its aged. Its almose like priccuito(sp) then.

Do you marinade your briskets? If so, do you marinade the side with the fat cap? Or do you just marinade the "meat" side.
Seems to me, if you were to marinade the fat cap, as the fat renders off during the smoke, it would take all that fine...

I've never done potatoes, but I think you're potatoes may come out a little under done depending on the size (large cut potatoes will take longer). I would probably cook them before hand for a little bit, just under done, and then roll out the fattie. But someone else may have better advice than...
