    6 hours in and it's holding at 155 degree's seems to be going fast, smoker has been an even 225. decided to put some brats in for a snack.

    Did you just use one pound of sausage? 10x8 seems small. I did my first fatty on Wed. From what I read here on the board is to use 2 lbs. When flattened to about 1/4 to 3/8 I had a 16x16 shape. Maybe you had too much stuffing for the amount of meat. I'm sure the more experienced here will chime...

    My first FATTY

    After reading all the posts and looking at all the pictures, I just had to make a couple. Green pepper and onions and colby jack cheese. Smoked for 3 hours. Toasted english muffin, egg, and a slice of pepper jack. I'm HOOKED! The wife thought they were great. This forum is great!
