    George, do you mean beef short ribs, beef back ribs, or both? These beef back ribs didn't have nearly as much meat as short ribs but the meat still tasted REALLY good.

    I just checked the leftovers. Yep--they're still there! I saw a whole bunch of liquid rendered fat in the foiled over water bowl (I never fill that bowl with water because it just serves to steam the meat) but the bone marrow is intact. Do you have any suggestions for extracting it?

    Thanks for the tip about finding them at Costco. For some reason I never think of looking for bone-in short ribs there. The only Whole Foods I know of is about 70-75 miles away from my home.

    I thought they were short ribs but the bones looked too long, or at least for what I find around here. I set out to cook beef back ribs and I'll do my best to find meatier racks next time. But like you, I prefer beef short ribs since there are so many ways to cook them.

    I know it's best to par-freeze (I just coined a new term!) meat before slicing but I usually wait till the last minute to start slicing the meat before marinating it for beef jerky. I hope to plan better next time--hope being the operative word.
