    Pork belly in MES

    I smoked a 3 lb piece of pork belly, perfect for the 3 of us, this afternoon. Ran the MES for 4 hours at 260F. Used cherry wood. It was quite tasty. Had some bbq sauce from last night's dinner, a Tyler Florence recipe. Sorry, no leftovers. My wife made a simple salad to go with it.

    The weather was kinda iffy but cleared up. My wife is a dual citizen so we try and celebrate both holidays if we can. Boneless skinless chicken on the grill. Charred up sweet pepper and toasted the tortillas. Yummy

    I smoked unwrapped at 250 and then wrapped at 275. You are running lower so it will take longer.
