I put enough pellets in the tube to last about 6 hours. It does not build up much heat as I also do it outside around the end of February, so its cold outside.
I do not have an actual smoke house. I use two cabinet smokers with Amazen tube smokers for smoke. I only do 45# at a time, as that is all that will fit in my two smokers.
Finally the wait is over. these things are great. I may reduce the garlic amount for my taste. Will need to start another batch right away before I run out.
I have used that Smoke hollow smoker for at least 3 years now and love it. It holds temperatures very well for me. I started out using the chip pan but switched to the A-maze-n oval tube smoker and never looked back. The tube lasts about 6 hours for me. I have done many overnight butt smokes...

That's what I thought. Off to the store for garlic. May as well get fresh cloves vs the jarred stuff. I need vinegar too after I looked. Didn't think this thru very well did I. LOL.
I am going to try this as it sounds great. I have the cukes on ice now and just looked for the garlic but found I do not have the jarred minced garlic. Has any one ever used dried minced garlic?

We mix in 15# batches. Only salt and pepper and cure
For 15# batch
10# lean beef
5# Pork butt with fat
3.5 oz. or 99.2 g Salt
.9 oz. or 25.5 g course ground black pepper

Tater tots baked in oven till crisp then covered with smoked pulled pork butt, smoked cheddar, and a couple of fried eggs, then back in oven to melt cheese is a wonderful meal.
