    Venison liver

Ahh, the son in Depew and his wife just moved from Bahama La. in Ckeektowaga to Como Park Blvd across from Ramstein Woods Nature Preserve.... A nephew lives near Union and Rt 33. He's an avid hunter with land near Attica. This trip involved the wedding of our youngest son in PA and two weeks...

    Venison liver

My experience has been that there's no need to skin it. Maybe try it both ways and decide after that. As soon as possible after taking the deer you want rinse it and flush water through the blood vessels while gently kneading the liver until the water runs clear or nearly clear. Some folks...

    Sweet Bread'n Butter pickles

You might want to try using apple cider vinegar and brown sugar in place of the white and see if you like the more complex (savory sweet?) flavor profile. And make it two votes for some onion....and some Bell pepper. My wife prefers white sugar and vinegar while I prefer apple cider vinegar...

high temp cheese in snack sticks

You will find more choices if you search for "stuffer kidney plate" or "stuffing plate" as those are far more common names than "bean plate". Fewer holes=larger openings and more nearly intact cheese (and meat hunks in coarse grind sausages so try to find a two hole plate. For cold smoked...

Neighbor said he would buy meat if I would smoke it. No convincing needed.

I can hear it now...."Gee Bob, you just said that you'd buy it if I smoked it. You never said you wanted any back!!"

    Central New York checking in!

Welcome from Pinnacle, North Carolina. Until two years ago we had a farm in Sennett, NY between Auburn and Skaneateles. I suspect that DanMcG and other CNY members will be along soon. I'm sure they will have some words of welcome and, if you want it, advice.

    Shipping Meat Question

Your local veterinarian is a good source for the small thick wall coolers similar to what Omaha Steaks uses. The vets get live vaccines in them pretty often. They also get vaccines in boxes that are simply lined with 1 inch foam board so make sure that they know you are interested in the ones...

    Greetings from NY

Glad that you had a good time. Are you going back for the fall run on the Salmon River or another of the salmon streams? Sodus is in the norther end of Cayuga County. Our farm was in the east central part of Cayuga County only 4 miles from the north end of Skaneateles Lake....

I'm on the "No Wrap" ribs bandwagon

I never spritz ribs and and only sptitzed butts or briskets a few times before deciding that, for me, it's a waste of time and only serves to cool the smoker and take longer to finish. I only wrapped ribs once or twice and again, for me at least, wrapping is no different than spritzing; I don't...

    Greetings from NY

Welcome, Swashbuckler, from Pinnacle, North Carolina. Until two years ago next week we had a farm in Sennett, NY next to Elderberry Farm and Restaurant the longtime organic farm and orchard on Center Street Rd. Back in the 1980s I was an active duty platoon sergeant at the old National Guard...

    Doing this backwards in WA

Welcome to the madness that is BBQ, sausage making, preserving stuff, cheese, home-brew and wine making etc. When you're ready to ask questions you'll find a lot of helpful folks on whichever build forum best fits you plans. I spent a lot of time around Yakima (at Yakima Firing Center) back in...

    $1.49/lb ribs at Lidl 6/26/2019 - 7/2/2019

The only question i'd ask is whether it has any crap added to "enhance flavor" (AKA line their pockets by making you pay meat prices for water or some nasty broth....). If it's 100% pork that's a great price.
