    Smoked Squirrel!

Well that certainly would explain a lot Pecularmike. I'll have to just stick with fried chicken hearts and livers when I need my weird food fix. It's probably been 25 years since I've had one, but convincing the folks back home that it's a bad idea will be an uphill battle. I'm sure they'll...

Just joined and a very new smoker

Welcome! Yes, definitely jump right in and go get a small boston butt. There's a ton of threads in here on how to do one very easily, and you'll be a superhero around the house when you serve the results. BTW, you'll see your particular smoker referred to in the boards as an "ECB" which stands...

    Smoked Squirrel!

OK, now we're on a topic that's near and dear to my heart... I spent *many* days in my youth going squirrel hunting with my Grandfather. I've even got a technique... Takes two people. You go find a good spot amongst some trees, and hunter #1 sits really still and starts listening and...

    How long to Brine?

I usually don't boil it to dissolve it - you don't want the hot water to start cooking the chicken. Dissolve it in cool water - it'll take some time, but not too long. I use kosher salt, and 2 gallon ziplock bags for whole chickens.

BBQ Grillware Vertical Propane Smoker from Lowe's

Hey Pigiron - did you let the box heat up before adding the wood? I can get mine smoking in 10 minutes if I add soaked chips to the firebox after it's already heated up to 220 or so. Did you have a lot of wind blowing? Remember, it won't be billowing smoke... FlaGriller - buddy what did you...

    Newbie question about smoke

Ain't that just the best thing in the world about smoking meat? If I could roll around in it like a dog I would...

BBQ Grillware Vertical Propane Smoker from Lowe's

That is EXACTLY what mine does. I don't even look at where the knob is turned... I just close the top vent, start on high, and listen for the whistle as I turn it down, and I know I'm in the ballpark of where it should be and I can start tweaking it in 15-20 minutes. One other thing I've...

BBQ Grillware Vertical Propane Smoker from Lowe's

Since there seems to be a lot of folks that are picking this smoker up, I thought I'd start a continuance of the thread that Virgo53 started here on this smoker. Me and FlaGriller were having a sidebar about it, and I thought it would be a good idea to post it for further discussion about...

    Smokin in Mexico

Welcome JC! I actually know a few Tampa folks around here that do goat every once in a while - apparently that's big in Cuba too. Next time I talk to them I'll bring it up and see if I can find anything out about how they do it. Heck, we might end up needing to add another topic category for...

    Newbie from Alabammer

Welcome! If you got the BBQ Grillware vertical propane smoker, we've got a thread on it over here. I have a co-worker that just picked up one, and apparently it's on sale at Lowes right now for $130-ish instead of the normal $170. Mmmm... fatties... might have to do one of those this afternoon.

    How long to Brine?

I usually go overnight, but I've heard that the MINIMUM you want to brine is 4 hours. I don't think you really can brine something for *too* long, because once the osmosis process is balanced out, the process stops - and after that point you're really just marinating I guess - but I could be...

    First Brisket This Weekend

Debi's definitely got one of the best guides on the brisket! The only other one I was able to find that dealt a lot with brisket selection (rather than cooking) was this site, but there's almost TOO much information there - too many variables and not a clear line on what's proper and what's not.

    First Early AM Brisket

Success! Temp got up to 170 finally, foiled, and kept it going until 193, which was about 4PM. Unfortunately there won't be any pics 'cause I can't find the old camera and my wife has the good one in St Louis. I thought for sure I knew where the old camera was dangit! It looks good, but the...

    First Early AM Brisket

Temp is stuck at 154. Good thing I started so early... Gonna let it play out. I got plan "B" (aka the Fatty) in place for dinner in case it goes late...

    meatloaf?

The only thing I've done that's close to a meatloaf is a fatty - but I'd have to agree with you that 95% lean hamburger might dry out if you're not careful. That's a bulky item you're smoking, so I'm guessing it'll have to be in for a while. Maybe the lean would be OK if you put foil under it...

    First Early AM Brisket

No prob Crown, add anything you like! - 9:12AM and the internal temp is now 136 - Flipped it at 8:45 and after some last minute reading, added a foil pan to the rack under it to catch all the brisket goodness. - Also, I just put on the fatty (stuffed with sharp cheddar, mozzerella, and...

    First Early AM Brisket

Just put on my first brisket at 6AM - WOO HOO! Why is it that it takes a team of horses to get me out of bed for work, but I can jump right out at 4AM when it comes to hunting, diving, or cooking? Hmm, think I just answered my own question... So here's what we've got going on: - 6lb brisket...

    Costco meat?

You know, I was JUST wondering about this last night. We may have to change the name of the boards to PsychicSmokingMeatForums.com! Thanks for posting this! D.

    Another First Brisket Smoke Thread!

Thanks for the details - I'm doing my first brisket this weekend and am doing my homework now... currently debating whether or not I should do an overnighter like Jeff Phillips has in his "Brisket How-To" off the main SMF page. I don't sleep a whole lot in the first place so that shouldn't be...
