If the internal temp of the brisket doesnt got to at least 190* its not going to be tender. I typically take mine to 195 - 200. If your only cooking at 170* you will never be able to finish the brisket. I have said this to many times today and am not sure what is going on but I would recomend...
If you could start earlier in the morning that would be ideal. I always recoomend start and finish in the smoker. If not cook it low and slow from 5am - 2pm foil and throw it in a 325 degree oven to finish. That will ensure you are done in time.

Yeah I always put water in the water pan of my ECB and have never used water in my SnP.
The Idea of sand instead of water, would proably work good as well, but I just like the idea of steam in my smoker (not that its making a ton of difference)

If you foil the butt and place in the oven, there is nothing wrong with turning the oven to 325-350 in order to speed things up if needed. I personally like to keep it low and slow the whole time, but if in a pinch you can turn the oven up to finish the job. It wont effect the quailty of the...
