    Poor Mans Porchetta

Wanted to do a Porchetta, a REAL one with Rine and all from a Pork Belly, but Id have to order it, take two weeks and explain to my wife why I'm blowing $50 on another smoking experiment. So I pulled out a half loin with a fat cap, butterflied it, put a Porchetta rub on it, tied it up and...

It reminds me of the old Hibachi grills i used in the 80s but on steroids. Is it pretty portable for you? I might want one of these packed up for a camping excursion.

    Kingsford pellets any good

Try Lumberjack charhickory. 100 % hickory charcoaled pellets. Ive used the standard 100% Hickory and the Char Hickory, the Char hickory almost gives a charcoal flavor, close anyway. Ive been getting them for $9.99 20lb bag at Norbys HW store here in Iowa.

First smoke with my PitBoss 820!

Welcome. Im new here as well and ive been having a blast with my new pit boss 820. Some people complain about not getting enough smoke from a pellet smoker, but I think thats because they actually cook with it not smoke. I mean it this way, set your dial to smoke. Put a waterpan in there to...

First Cook On The New New Weber Performer: Massive Turkey Breast (Pics)

Excellent presentation of the turkey slices. The Weber kettle is so versatile you just cant go wrong with it. My daughter calls it her grill, because she cooks steaks for me when Im on oxygen. we dont have the slow n sear but she uses some fire bricks and sections off the hot side, then puts...

    Finally Got my 500 Gallon

I saw a video where a guy cleaned the outside off then heated up sections of it with a weed killer flame torch (Propane) then rubbed boiled linseed oil on it. Not sure im a fan of the method, but it was interesting.

    Tom-E-Hawk on Pit Boss 820

Hey thanks. My boy (28) said it was the best steak I ever did. And It was good. I still like Texas Roadhouse 22oz bone in Ribeye the best. Probably the msg seasonings or something, But this was a great steak. The doneness was absolutely perfect. Sometimes its hard to nail that down right.

Outdoor Kitchen - do I keep my green egg

My Daughter accuses me of keeping a bbq graveyard in our back acreage. She says in a few hundred years there going to dig up all these grills, smokers and fire pits and think an entire society lived here. Personally id keep the ceramic egg. It will likely outlast any other smoker, grill or...

New trailer build 2 Rf smokers

Any updates on your progress? Looks good, firebox definitely looks big enough. Biggest complaint from offset owners is the wanted a bigger fire box. second is the smoke stack diameter is too small. These projects are fun to watch and even better to actually accomplish im sure.

lowest temp possible to smoke a beef steak

You can always do both. There is a souxvide channel where a guy named Guga will smoke some steaks, then finish them souxvide. I have smoked steak at 175 to 220 until internal is 125. Depending on thickness, that gives it plenty of time to get a good smoke flavor infused in it. Then I set it...

Pit Boss 820M Mod Front shelf install

Purchased an 820M at Menards this summer, and really ended up needing a front shelf for it. I tried first by ordering one off ebay, ended up over $50 with shipping, but it was so thin and flimsy and not nearly deep enough, So I sent it back and decided to make my own. I started by locating some...
