Back at home after a visit to frozen Cleveland .
to day is 82f nice and warm . i had to put a piece of meat on the grill.
so for dinner i made , Rib eye with beet and onion salad ,and tahini with hot pepper sauce .

i smoke fish all the time ,hot smoke ,cold smoke . no problem .
fish dos not smell if it is fresh .
if you are planing to cold smoke the the fish don't forget to brine it with cure #1 .
i smoked some kosher bacon .
two goose breast . dry rub from
spices ,cure#1 , sugar and salt .
left it for four days ,and turned it every day.
after a ice bath . i left it to dry in the breeze .
then smoked it with cherry wood till IT 165 .
