    ribs::bone side up or down?

    PK tells it like it is...Bone down, so the smoke will penetrate the membrane side too... If there is a pool of liquid sitting in the concave portion of the ribs with the bone side up, then smoke will never get to the meat, as the liquid will block it.

    What's your favorite name for a BBQ Team?

    Hi Everyone, I have to tell you that the creativity around BBQ team names is amazing. Last year, me and Mrs. Engineer were at the American Royal walking around, and taking in all of the sights, smells (and a few beers), and checking out some of the party's. Some of the names were hilarious...

    Pumpkin Cheesecake

    Use an 8 inch spring form pan for this recipe. If you don’t have one, you should get one. They’re great for thick cheesecake and other delicious deserts. If you don’t want to use a springform pan, this recipe will also work with two 9 inch pie plates. The Cheesecakes will just be smaller. Here...

    Cant get Cardboard Smoker hot enough

    I think a match would make it hotter...for a short time! Just Kidding. A couple suggestions that I have for you is that it would appear that there is a lot of area inside the box as it is really tall...Kind of tough to judge from the photos, but that is my guess. If you reduce the height, you...

    Fried Prairie Oysters

    Grew up close to my Grandpa's farm, and I got to "help" a lot (read as free labor). When it came to calf "cutting" time, we would then have a "calf fry". Battered and deep fried, I gotta tell you, they are really good. I know it sounds barbaric, but they really are good eating...so are cow...

    For newbies, the 3 B's are what you want to work with. Brats - inexpensive but great on the smoker. Use these to get your temperature under control and experiment with different smoking woods.Butt - The next step. Hard to screw up but will test you for a longer smoke and also throw a plateau...
