    Splits

I've been using charcoal for heat and wood pieces for flavor.  I was derided for not using wood exclusively since I have an unlimited source of free oak.  The wood I've picked of consists mainly of rough cut red oak that's a full 2" thick and varies from 2" wide to 12" wide.  Photo is attached...

    Harbor Freight Wood (Log) Splitter

Joe, I have the K Cracker and it works well on smaller pieces.  But I also get larger pieces that have to be split some other way.  I'm too old to be swinging a maul and don't like chasing pieces that go flying off in different directions.  So I bought the 5 ton electric splitter.  I looked at...

    Harbor Freight Wood (Log) Splitter

I sent a question to HF about the bleed screw and received a response within a couple of hours.  The HF tech said to open the bleed screw a couple of turns, as stated in the owner's manual.  Well, they changed the manual.  The one in the box said to remove it, the online manual says to open it a...

    Harbor Freight Wood (Log) Splitter

I picked up the electric 5-ton unit today and have played with it a bit.  Anyone else out there have or have used one?  Seems to work well for what I'm using it for; making splits for my offset smoker. Couple of observations.  The unit is low, which means raising it to a comfortable height is...

    Emergency Help For Tomorrow

I arrived in VN on April 1, 1967 (joke was on me) and was stationed at Long Binh.  In June, '67, one of the line companies in my battalion (along with me and three other surveyors) moved to Bearcat to build/upgrade the airfield just outside the perimeter.  We moved back to LB in November.  Up...

    Emergency Help For Tomorrow

Bear, what I mean by interchangeable is that either probe can be plugged into either hole.  They both register, regardless of position.  Assuming both work. Dong Tam and the 9th.  I was in the engineers stationed at Long Binh, but spent six months at Bearcat building the airfield there.  At the...

    Emergency Help For Tomorrow

Mrazz, the 732 requires that the transmitter has to be on and then the receiver turned on within 30 seconds.  Or maybe the other way.  I can't remember and have lost my instructions.  Either way, one has to be on and the other turned on soon.  As for the probes, mine read interchangeably. ...

What's your favorite home cooked meal??

Low country boil has several variations.  It's also known as Beaufort Stew and Frogmore Stew.  In Louisiana, crawfish might be used instead of shrimp.  I don't peel the shrimp and cook them with heads on.  All that can be removed as part of the eating process.  And the crab can be the native...

What's your favorite home cooked meal??

For me, it's low country boil.  For all you who don't live in the south, it's a mix of crab in the shell, shrimp, potatoes, corn on the cob, and Andouille sausage, all boiled together in a big pot of water.

    Need some opinions

Nomad, there are diverse opinions about aging brisket.  Some say it does not help the flavor, others say it does.  Some say that aging makes no difference for tenderizing and the low and slow cook is what causes tenderness.  But no one says it hurts the end product.  Most say it can (should) be...

    Need some opinions

"It has a packing date of 7-16-17 and I bought it on 7-17-17. Pictures attached of brisket in packaging. Right now it is sitting in my refrigerator flex drawer set a temperature of 33°F." With that date, you have the option of aging it for a while, up to ~45 days.  There is no rush to cook or...

    Web Site Errors/Omissions

I thought I posted this yesterday, but now can't find it.  I guess it didn't get posted, so I'll repeat it Why is it many brand name stores display web sites aren't accurate and reliable?  Many times, I have searched for and located a particular item in a store, only to find that it's not there...

Complaint About Big Box Web Sites

When I search for a particular item and find it, often the item is not to be found in the store.  Many times, the site indicates that a specific store has 45 or whatever in stock.  Then when I go to the store, there are none there and the clerks have no clue.  Best recent example is the Costo...

Intake issues with Oklahoma Joe's Highland

hardcookin is right on.  Make sure you have a good bed of coals to put the splits on, initially from charcoal.  I put the "next" wood on top of the firebox.  Mine has a flat warming plate on the top of the FB and I've had wood that was almost ready to ignite.  Some pieces are black (and hot) on...

Intake issues with Oklahoma Joe's Highland

My thoughts on things to look for: Make certain your wood is completely dry.  Wet wood doesn't burn well. Try using smaller pieces of wood and feed the fire more often. If all else fails, use a temp control blower system.  It will provide the necessary amount of air to keep the fire burning. ...

    Brisket Trimmings

A lot of fat is typically trimmed from a brisket prior to smoking it.  What can be done with this "waste"?  Maybe put it in a shallow pan and cook it along with the brisket or put it in a perforated container and collect the drippings.  And then, what could be done with the end product? ...

    A Question About the Juice

Thanks for the replies.  I'm going to use a pan to catch all that good stuff.

    A Question About the Juice

Johnny, I think catching all that liquid on foil would be difficult to handle when getting it out.  My thought is to drill a drain hole at one end of the CC (lowest point) and catch the juice in a container.  As you suggested, tilting the smoker would direct most of it to the hole.
