Since it has been below zero here in MN I figured this is perfect "Cold" smoking weather so I decided to try my hand at cheese. I used some Mild Cheddar, Mozz, Pepper Jack and Colby.
I used Peach Pellets in the Amazen, tried to smoke for a total of 3 hours but my pellets went out on me around...
Just did my first batch of cheese today and I used Todd's recommendation and got some Peach for my AMNS I'll let you know in 2-3 weeks how it turns out ;)

My son is 9 and rather the chef himself.....I think it's time for him to start doing more of the smoking then just checking the smoker..... Looks great! Congrats to the chef, and his helper
Those ribs look great to me! We had a heat wave here where it got to 43 degrees............I wish I would have had the time to fire up the smoker but I always seem to need to plan my smokes well in advance so as to not get in trouble with other people's plans.
I like the way you think! If it fits, it cooks.
That and you have wonderful Texas Weather so you can do a bit more cooking this time of year than me.
