    Thanks for the info. I’ve used it and it’s kinda Smokey. The trager chicken rub was way to salty on those ribs. It’s was ok on the butt. Took 1 hour per pound at 250-little bit of 275, 9.5 hours

    With fire brick 1/4” is fine I’d think. The brick is a good insulator protecting the steel

    Put fire brick on the bottom and some on the sides would be good I’m cooking on my out right now. Usually I don’t stick this big a piece in it. Mines 1/4 stainless and you can put your hand on the outside for a second in the winter the firebrick on the bottom on mine is a more durable brick...

    Thanks warren. Got them on at 9 am so I’m bumping up the heat, 250-275. I’m burning oak, apple and little black walnut. That’s a big chunck of apple in there

    Nice job Chris! Try the harbor freight ceramic knife. It’s the sharpest and longest lasting knife I’ve used and it’s like 10$. You can use the 20% off coupon too. I’m surprised this thread didn’t get moved btw. Your a cool guy so looks like you get a pass

    seen winco is selling new ribs. These are 100% natural nothing added. 4.5 pound rack kinda lean looking. Can’t beat 2.20 a pound tho and I’m injecting the butt tonight and sprinkled little rub on the ribs. Hopefully I’ll get them on early morning, going on my stick burner. more like 10 pounds...

    This black walnut is very heavy and hard to split. Very easy to cut tho. My moisture meter said about 50% water. That sounds about right becuase it’s heavy wet and very light when dry. Harrison ford came over and used his light saber to cut the blank for me so i didn’t turn it all into cooking wood

    Got this pear last weekend and it was in perfect shape besides the nail I got into at the very base. Did hurt the chain that bad. I haven’t sharpend it and I’ve been cutting walnut yesterday and today. It’s not much so I’ll mostly keep it for myself to test out and play with. It’s dense stuff...
