    Hey all I finally got my new WSM 22.5 and have done a few cooks on it so far. The thing is incredible! My only question is for those of you who use them in competitions what if any mods do you suggest. I live in Florida so the coldest it should see is still well above freezing.

    It is a heat defuser. Basically allowing for indirect heat. By removing the pan you essentially have a really tall charcoal grill not a smoker. Have you done any mods on your ecb?

    Try leaving the chicken unwrapped in the fridge for at least a couple of hours. This will, along with a good pat down, dry out the skin. Also adding a little extra salt to the skin will pull the moister out.

    Try using tupelo honey for your sweetener. It is diebetic friendly (My father in law raises bees ). It's a very mild flavor so it shouldn't mess with the overall flavor of the sauce.
