This post about the Auber seems like a great solution. I did not know they had them with a built-in relay. It even comes with a thermocouple. To hook it into the smoker could take some wiring skills to bypass the existing controller. Maybe a friend who is familiar with wiring could help. It...
If you do the mailbox mod you can put a tee in the intake pipe going to the cooker and use a valve to bleed off unwanted smoke until it begins to burn more cleanly. (and you can regulate the amount that goes into the smoker) I had the same issues - inconsistency.
Gotta love the toggle clamps to hold the doors closed! the insulation is great for maintaining a more consistent temp. The design is worth studying for shure.
I posted this in the wrong spot but couldn't figure out how to move it to the smoker section. I can't work the internet - but after 5 years of working with this smoker, I am glad it finally works consistently.
it is somewhat like the way Ole Hickory smokers use natural gas to maintain the temp and a gas flame also burns the flavor wood. This rig separates the cooking temp and the smoke generation as individually controlled entities. The 220v oven and omron controller maintains an even temp - the smoke...
chunk applewood is being burnt in a smoke generator tube to create wood flavor. A small propane burner sits below the fire tube to burn the wood. An adjustable fish pump venturi pushes the desired amount of smoke into the smoker. An exhaust fan evacuates the excess smoke and pumps it outside...
Just finished our first smoke with the new smoke generator rig - and what a difference! the steaks had a very subtle wood smoke flavor. The amount of smoke was very controlled which is what we wanted.
It is a smoke generator. Seems to be working OK. The burner below set on low burns the wood chunks. The burner also helped heat up the intake pipe that goes into the smoker. So while the smoker was coming up to temp the intake piping was being warmed up which has always been a challenge for me...
