    Butter Kissed Biscuits

Looks delicious! What makes them butter "kissed"? That makes it sound like there is not enough butter... 🤣

    Grilled Cheese Part Deux

Thanks guys! This morning chopped up the leftover cheese and bread, added some hotdogs and a dozen eggs and turned it into a strata. The cheese on top got crunchy and was excellent! This cheese has a very high capacity for char! I should have grilled it harder yesterday. Luckily we have...

    Grilled Cheese Part Deux

Another Friday, another grilled cheese. Since @jcam222 mentioned haloumi last time, I decided to give that a go. Recipes for haloumi are all over the place. I decided to do the following: Did 3.5 gallon batch. Raw cows milk. 1/2tsp rennet (some recipes called for a LOT of rennet, I typically...

    4 probe thermometer

I have this same set. So probes work for whatever you want to track, air or meat. But the connections and wires are not water resistant. If they get wet, they will read way off. 20 to 70 F IMO. Keep them dry.

    Port-infused cheddar @ 5 months

I think I need to develop a way to keep the pressing environment warm. I really want to explore more natural rinds, but everytime I attempt it, I have to much cracking. Addressing humidity helped, but I still have issues during drying.

    Port-infused cheddar @ 5 months

Beautiful. Dues the infusion step make the curds any harder to press/knit?

    BBQ Grilled Cheese

You all know that feeling, when you just need some grilled food or BBQ. Well it happened yesterday around 3 PM. Aside from being far too late to start smoking anything, our family doesn't eat meat on Fridays. What to do, what to do. It struck me, milk is basically a baby cow, but still in liquid...

    Duck Eggs

Ducks instantly turn "fresh water" into a mucky pond! Trying to provide fresh water for a duck is a fools errand. 🙃

    Duck Eggs

I hadn't noticed a taste to duck eggs at all. 🤔 We like them for baking and will use them for scrabbled. They hold up nice to a hash or something with more texture since they set firmer. Interested to see how the picked texture is. Fried the whites are too firm for me. I always assumed boiled...

Got the need for some ribs

Well I'm sorry to tell you, you don't have a smoke "ring" on those ribs... They are all smoke! They at least look great!

How to Use Cure #1 in Rice Dressing

Never heard of rice stuffing, sounds delicious. Will definitely give it a shot, would be happy to see some recommended recipes. Reading a few recipes, I cannot fathom what would make it a botulism risk. I don't see any step with long hold and anaerobic. What an I missing?

A fun way to cruise the campgrounds.

Thanks! We have fun with it. We occasionally meet people and they respond, "you're the ones with that bike thing", lol

    Wild Game Casing

I don't think there is a potential "have to case" for me.. I'd eat bulk sausage...

A fun way to cruise the campgrounds.

This is a our e-trike. Fits 4 kids in front (or one adult and two kids) and one in the baby seat behind. We just use it for cruising around the neighborhood.

White Stilton with Apricots @ 4 months

What is a white Stilton? A blue recipe but no P. Roqiforti added? Looks tasty whatever it is. Looks like perfect consolidation. Do you do anything to sanitize additives?

    peppers started. onions trimmed

Just saw this for the first time. Why did you trim your onions? Curious about starting from own seeds. We mail order onion starts every year, but they are SPENDY!

    Safe to eat?

Was it wrapped in paper and or foil? If so, I say safe. It was essentially a pasteurized environment inside. Personally I'd serve it.
Great deal on LEM Grinders!
