    Seems we always make this on NYE and on New Years some pork and sauerkraut ... Starting with a nice chunk .. 3 1/3 lbs .. added to water in large pot and starting to boil ... added flavor package included .. added 6 peppercorns added 4 garlic cloves and will reduce to simmer for 50 minutes...

    I could use a little wisdom...Shoulder @159 16 hours later.

    What I would do is .. wrap it, cause you have enough smoke .. and finish like you say in oven or bump up temp in smoker ... what you are doing, should be 205 internal with a 3 hr cook in oven ..
