here's how I check them out. I take both ends and try to touch the ends together.. do the to several briskets and you will feel the firmness or lack of. you want the ones that take less effort to bend.. if they are partially frozen, you can forget any type.of bend or roll test..
Man this is a tough one to figure out. therms are fine, temp and everything were fine , good plan etc. you did everything rite, damn pork butt was being stubborn.. i have not cooked one under 8 lbs. most in the 8 to 10 range.. Bigger cuts of meat have been more forgiving for me.. the smaller...
the one above will run 165 gal .. I'll prolly just run a 120 gal.. I'd say if you got one big enough to run a 300 gal. you'd be

22.31 cu. ft. to put that number in perspective, a 55.gal drum is 7.35 cu. ft. X 3 is 22.05 ...
heres a few more pictures. im not saying these cook great but 2 of them look like they could.. the big flat tank looks under sized on the firebox end..
900 sq in cooking grate area is all i need anymore, if that.. so smaller is ok..
i dont like the wooden smoke box but this guy may have pulled it off..
