Those hot dogs look great! I made Discos PWE dogs last year with collagen and was real happy with the way they turned out.

Say it isn't so!! I had some of the 2nd round of NEPAS's goodies, salami & some cheeses, they were real good and went fast. Maybe they were just gobbled up.

Made a batch of these and used the vac-sealer method. I made a few adjustments for my taste, 2 clove fresh garlic, and 2 slices jalapeno, then followed the rest of your recipe. Everyone who has tried them said they turned out GREAT!

Smithfield sells their pork butts with the phosphates added. I generally avoid it because of the additives. After reading some of the links I may reconsider that.

Been a heck of a storm season for many of us this year.
This will make the time at the fall gathering that much sweeter. Got a chicken in the smoker for dinner tonight. Had left over smoked chicken salad in my plans for lunch, Ann snapped me back to reality, company coming over soon.
