Market is this Sunday. Made a combo mix of FMF hard red/white.
Turned out good.
And an all white with garlic/herb loaf. After mixing and couple slap/folds I put in the pan and in fridge overnight.
Also good.
Almost a bad bake.
Had my sourdough/italian herb stick to my proofing basket. I had to help it out and it just went flat. Baked anyways.
Not too bad but wont have it for sale.
Milling some hard white wheat berries.
This flour is good for sourdough and yeast breads.
I did sift with a 60 mesh screen, the chaff goes to the cluckers
Got 2 ready for mixing.
Both of these are.
450 g bf (BF=Bread flour)
50g 14% high protein bf
50g starter
9g salt
1.5 T braggs nutritional yeast
60g high temp cheddar (I use for sausage making)
1 frozen jalapeño that will be shredded with a grater
20g jalapeno powder.

I wanted to put up a pegboard for my bread accessories. Wanted black but since my wife is a 5.5 year breast cancer survivor I decided to go pink. Breadpeg is still a work in progress.
