Yes it was all vegetables & brown rice. The veggies were cold & the rice was warm. The peanut sauce made the whole dish.

Lived in Florida most of my life & went to an outdoor on the water seafood restaurant. They had blackened grouper on the menu. I didn’t complain, but I got blackend tilapia. And yes I can tell the difference! I’m sure it goes on all the time, especially with the high seafood prices now.

We use our Emeril air fryer, set at 150 & it will stay there for hours. Of course there is limited space, but for one brisket, maybe two, it is very doable.

The fresh seafood is what I miss about not being on the coast anymore. But with overnight shipping, you can get just about anything you want. However the downside is, it can be a bit pricey!

Just 1000 grams, I’m assuming you’re using curing salt, as in cure #1. You can add all the extra ingredients you want but the curing salt must be CORRECT for the amount of MEAT you are curing. This is the calculator most of us use. Just put in the grams of meat & use the default values...
