    Using the brine is definitely the way to go (I knew this just never had done it the last few years) -- I used a different rub in the recipe but it seems to really help with the juiciness.  (per my entire family compared to prior years)

    What they said in wind and using windbreaks! I started with an ECB electric in a colder climate (Detroit area) and found I needed to wrap the smoker as well have a wind break as the electric did not have enough power below 25-30. I started with a piece of carpet - not good - got a cheap weld...

    I finally ran a turkey brined and without having to spatchcock it. (My UDS does not have a some lid and now I have a vertical charcoal unit) Followed Jeff's brine and bacon butter recipe - getting the bacon butter under the skin is a challenge. Used with a BBQ guru!

    Times 2  - Demos    One batch will handle 2 butts.  Just did this again last week. Worked great.  (I do this in addition to saving any juice I can - which I will run through a separator)

    Also - had someone make up a triple batch of Dutch's bean recipe and smoked that at the end.  I got so many amazing comments from those - you would have thought folks had never had real baked beans!

    I have done both.... bought my 1st one from Bubba and built 2 others. Yea, you save some $$$ but then again I like the cool paint job I got on my Bubba one. I was to lazy to paint my other 2.
