I've always thought brisket was pretty fatty to begin with, but I guess if you trim it down really well, it probably isn't that fatty. To me, the optimal lean/fat ratio is 80/20. Higher lean is not as juicy, to me, more fat than 20 is just too much (and creates a fireball in the grill).

I'm a new user of the Amaz-N smoking tube, and I was curious how everyone keeps theirs clean. Got mine in October and have quite a few uses on it, so I just ran it through the dishwasher. Came pretty clean, but still somewhat discolored. What do the rest of you do (if anything).

Sadly there are people that intentionally cook until it is well done (#5 or shoe leather as me and wife call it) THEN add ketchup to it. I guess the only way to eat shoe leather is with ketchup. Even worse are those that put ketchup on a #1, 2, or 3 steak.
