So you just cut it out if the wrapper and dump it in the brine? Seems like a nice time saver. I have 2 sitting in the freezer, I think I see the future 😃
As an FYI the 1600 is a vertically stretched 1250….3 shelves properly spaced…..
The other huge change is the deflector plate….its peaked in the middle, which means less distance for oils to run of vs burn…you can see it in this pic.
My old Memphis grill was designed this was and I really...
Well when you only have a breast you use that gravy package that came with it. This might of been the best turkey breast yet. Cured and smoked. I normally dont like turkey but wow was this good.
I am interested in Curing and smoking a whole turkey. I have smoked many but haven't cured. After researching I planned on using Pop's cure recipe and was planning on injecting based on the data I saw on this forum.
My question for this group is 3 fold.
1. Has anyone done this and was is...
To cold here to cook outside so went to the freezer and took out a bag of PP and a bag of roto turkey. Will make slaw and charro beans. Nothing like smoked meat on a cold winters day.
What are you guys cooking? I know a lot of you are under house arrest.
I like them any way but dried out, brined and smoked brined and baked or injected and baked or smoked, on a whim I bought a Popeyes cajun turkey, heat and eat, me and my wife love turkey while the rest of the yawhoos love ham, will report back after the feed to let you know if it was worth $50...

Here is his smoker.
The bottom pic is his redneck cold smoke set up, two cans put together with holes drilled into them, filled with chips and dust. I call that a smoke bomb, and I've been using them for many yrs in my barrel smoker, gas grill, and Weber kettles.
His smoked Salmon and cold...
Another year, and an opportunity to share blessings this year. My wife and I volunteer our time to cook for our Church food pantry's Thanksgiving meal. Church pays for all but we still try to keep cost reasonable. Cooking 175 pounds of bone in turkey breasts. 24 birds in total, not all are...
Thanks! We just used chicken stock from the store. For some reason we never get around to making our own even when we have the bits to do it. I’m sure some quality homemade would bump it up 👍
Shouldn't be a problem. Have smoked a turkey down to -20°. You won't need that high of temps so should be good. I do have my 40 wrapped in reflectix and weld blanket. Key as @bigfurmn stated, block the wind. That is worse than the ambient temp.
...the Saturday after and will just have a smaller group of the kids/grandkids, maybe a couple other family members. Doing the smokedturkey and a ham because my son prefers it to turkey, and most of the normal sides.
We always get a to go for Thursday actually Thanksgiving day from a local...
NICE! I actually prefer smokedturkey over brisket. Was at Rudy's in Texas and the turkey was unanimously named the best by our group. I am fairly certain they used some of their BBQ sauce in the brine/injection which is something I want to try.
