Great info! Yeah I can already tell I placed the probe wrong. It’s going up way too fast. It’s showing 190 now. I’ll wait to 200 and pull it to test and readjust the probe.

I agree with @Brokenhandle i try to not open the cooker at all unless I have to. Also have you verified with another thermometer that the smoker temp is actual what it’s reading?

A word of advice and it can't be said enough...invest in a multi-probe thermometer with hi/lo temp alarms.Once you do this you'll never have to ask those questions again.
I have the Alpha Grillers Meat Thermometer Digital and have enjoyed it so much I bought a second when I lost the first! It's $20 normally, on sale for $16 right now.

The real question is, was it probe tender? Cooking to a final IT only is a huge mistake on brisket. When the hand held probe goes in the feel should be soft, like pushing into a peanut butter jar. There are scientific reasons why.

Looks like things are moving along nicely. If you're gonna wrap it, I would drop the temp from 325. High temp I cook my butts is 265 maybe 275 sugar in the rub dependent.. See where it is with an accurate thermometer, and wrap somewhere around 165ish... then go to probe tender.

So far it works really well. I tested it against my instant read thermometer and it was always within a degree of it.
It is nice that it shows the ambient temperature as well as the meat temp. This shows every time you opened up to lid.
There is another view if you choose.
My instant read thermometer decided to up and leave. ??
It's been stored until needed in the same drawer slot for a couple years.

True, but use one on a $140-160 full prime packer being smoked overnight and have it fail to warn you the flame went out. You could be out more than just the cost of the cheap probe! JMTC 🧐
Great ribs. A few years ago I bought a SNS kettle, with the slow-n-sear basket and really like it. Another feature I like is that SNS mounts the thermometer below the vent.

Any thermometer that isn’t at grate level or real close to, is worthless. If meat isn’t within about 2” in height from the thermometer it tells you nothing about the meat
