All Great advice above!! I do it hot and fast 260-300F . Pull it when probe tender, I probe it with an instant read thermometer. When its done, wrap in foil and rest it for an hour or longer. I put it in a cooler with old beach towels. This is where all the magic happens.
Have Fun and post...
I'm thinking of buying a Weber Smokey Joe charcoal 14" inch but it has no thermometer. I'd like to smoke briskets and other food on it and I'd like to know the ambient temperature of the inside of the Weber. What do you guys recommend as an affordable option for temperature monitoring?
I either package and use the sous vide to reheat or I separate the juice from the fat then put the juice in the tray with the meat and into the oven covered with plastic wrap and foil to reheat.
Looks great by the way.
Ty so much, I was a little worried about the temp being low after 4 hours but I think my thermometer is off a few degrees, so I believe the 4 hour window should be ok, normally I am around 160 after 4 hours! How do you reheat your pulled pork the next day? Hope you and the family have a nice...
...to bump it up gradually I broke out the ThermoPro and found the new electric smoker is at least 20-25 degrees higher in cabinet temp than the unit’s digital thermosat and thermometer read. So I probably started out the process at 145-150 thinking the setting of 120 was accurate. Made...
...on my knowledge of past cooks and my Thermapen.
With voice dictation, I place the phone in my shirt pocket and just explain what the thermometer says and what the meat looks like. I also take pictures on occasion and throw in there. It also does a decent job of analyzing photos.
I am a...
...which indicates the cooking has stopped. Then rewrap and place in a cooler surrounded with towels for at least 2 hours. Keep a reporting thermometer in it to monitor the IT. In 2 hours it will never drop to 150º but you should be aware that this in the minimal temp to maintain food safety...
...north of 200f. I bet if you search this forum, you'll see the number 203 as being extremely popular. It shouldn't be. Before a digital thermometer, I stuck a meat thermo in them by looks alone. The thermo could have been broken for all I cared. I was feeling it for texture. Now I use...
...I've yet to read a negative report on them.
Now regardless of the smoker used, overnight smoking should only be done with a reporting thermometer that can wake you if the grate temp drops. There's more: make sure it can wake you, your phone is not on do not disturb, along with the...
I didn't measure the preheat, I just waited an hour assuming it's gotta be in the ball park.
I'm going to menards tomorrow to get another thermometer just for the ambient temp. I ended up pulling that chicken and putting in oven to finish just to try to crisp up the skin a bit, and at 400...
When the temp is within the range of that thermometer, it’ll turn blue or green. So, if the water temp is say 76f, the numbers will be a different color than the rest. If the temp is beyond the range in either direction, they’ll all be the same. They’re not 100% accurate, but if you’re using it...
...at those two spectrums as a two point calibration to insure my readings through meat range is consistent. Much like checking a meat thermometer in both boiling water and in ice water. If I was testing water or even soil alone, then the 7.01 test would be enough. But I need to know accurately...
Boil water and check ur thermometer every once in a while I’ve used quite a few and tossed anything that couldn’t pass the boiling water calibration … had good luck with Walmart ones and the ink bird ones
...said is exactly what I had to do. I think it will work out well in the long run. The meat is resting now for the past 3.5 hours. Another thermometer was about 10⁰ low, and actually dropping. The UEI has always been very accurate, and I tested it today anyway, 33F and 212.2 F. I recommend...
...weight. Would recommend smoking it at a verified 275º grate temp. You need to verify your grate temp with a known calibrated external thermometer. Do NOT reply on the built in thermometer, they are notorious for being inaccurate. Allow for 14 hours until dinner time. The brisket should become...
Here's a question. In the interest of speed and cleanliness, when brewing I often use an IR thermometer. Do you use them at all in sausage making? I realize there's caveats to it, it only works on certain things. And the accuracy is possibly suspect, but the precision is adequate for me to...
