I would suggest getting a digital thermometer' hang in center of smoker and set your temp on the medium setting and let it go for about 45-60 mins to see what type of temps you are getting and go from there. Yes you should be able to make some delicious food in that unit.

Those are a great idea, but do you want the thermometer in the lid or on the side of the kettle about a 1/2" above the grate. That would give you a more accurate temp reading.

I would start by checking the calibration of the probe in some boiling water. Use another thermometer to verify rhe probe is reading correct....if it is, I would subscribe to the theory that the probe was positioned in a fat seam and unable to get a good reading.
I'm spoiled I guess . The SmokeFire reports cooking temps without a probe hooked up . Sends an email alert even if I don't have the app open .
If I do a long cook , I do hook up my Signals .

Did you actually verify your PID pit temps with a digital thermometer? PID controller may need some calibrating, it may have been running hotter than anticipated.

The fat on a ribeye is better closer to medium. And it's often a little undercooked if you order medium, which makes it about right.
