    Trying again… brisket going in.

...for tenderness by stabbing all over (especially the center thickest part of the flat) with something like a wooden kabob skewer or even a thermometer temp probe. When it goes in with no resistance it is tender and therefore done. Final, note. I also do the 275F smoker temp because the...

I'm looking at under $200 wood/charcoal pizza ovens, anybody have tips on which is best?

...always get a very thick steel for the oven if you like NY style. From my experience 1000 is too hot. My Ooni has hit 1015F before my thermometer couldnt read higher. It's way too hot. I like the 650 to 750 range. 800 max. AVPN: https://www.pizzanapoletana.org/en/ recommends a cooking...

I don't get the hate on Pellet Smokers.

I will happily buy another pellet smoker once I get re-established. So good for overnight cooks. I also had a MES40 with a mailbox mod that I liked, but occasionally the AMPS would go out prematurely during the cook. Not a problem with a pellet smoker with a large hopper, and a remote thermometer.

    No smoke

Wings at 350, baby backs at 250, chuck roast 275. Traeger special blend, Traeger hickory, Royal Oak charcoal pellets. I would not know how to get a calibrated third party reporting thermometer. Thanking you, Matt, ahead of time for your help!

    Pellet smoker shut off

This is yet another reason why a good reporting thermometer that works with your wifi is essential equipment. It will warn you via phone if the grate temps drops. At least you would have known and could have decided whether to come home early in order to resolve the problem. Never leave home or...

    Pellet smoker shut off

I seasoned with salt and pepper no injections and did not have any thermometer/probe in it. I went and stuck an instant read when I found it.

My first time using a pellet smoker

can't say on reqtec, but if you are going in for the long haul I'd invst in a multiple probe thermometer like an `` @Inkbirdbbq and put probe on grate. most pellet smokers are notorius for inaccurate built in probes. your first cook looks great

Thermoworks rfx gateway not turning on

FYI It's been a few years but I tried to get a "gateway' working with my new Smoke thermometer. Suffices to say that I was not able to get it to work reliably and start up without fiddling with it every cook. I did work with Thermoworks support but it still was troublesome. They did treat me...

    Temperature Gauge recommendations

As an fyi, did not go out to ranch this weekend, but may middle of week. However, I do have the thermometer soaking w BP Blaster in the shaft & nut joint. Hopefully that can/will loosen it so i can recalibrate, if it can be recalibrated.

    Temp drop overnight

Yup you're safe and please take @normanaj advice and get a reporting thermometer. First rule of thumb in overnight smoking, always have a thermometer that can wake you if the temp drops!

    Inkbird 14-bw and 11pb issues

Bump….I tried it again and ended up pulling the thermometer out and just using an instant read. Pretty frustrating they are all new and pretty much unusable. Wouldn’t even stay connected to the case sitting on the bottom of my kettle now. Not sure how much closer I can get it but they are junk imo.

    New approach.

I have it lit right now. Built in thermometer looks like it's about 50 degrees off. I playing around with the air intake and exhaust, but can't seem to get the temps down to 250. Guessing that i have air seeping in somewhere. Should have done this earlier with daylight.

Rib Roast Smoked on Weber Kettle

It was about 130F in the center using a hand-held thermometer. The probes you leave in while cooking are handy but tend to read a little high. So when it gets close to what I want, I check IT manually.

I bought an Ashcroft thermometer for the smoker I got in 1996. It is still working fine albeit my smoker never sits in the rain or direct sunlight. The smoker I bought had prob sat in the elements for a yr, maybe more. But, it too is covered now....thanks for everyone's feedback, I...

Seared steak stuck to cast iron pan??

Get an infrared thermometer if you dont have one. You want about 425 surface temp. After several cooks you will know what's best for your pan and thermometer temp. Mixed thoughts out there on oiling the meat vs. the pan. Really cant hurt to do a bit of both but you need a high smoke point oil...

Brisket #5 - no stall, probe tender

Thanks for your reply. A few things: 1) only monitoring ambient temp with my meater wireless thermometer and the temp my Traeger gives me which I know is inaccurate. I set the temp to 200 and the ambient temp fluctuates up and down bit, mostly ambient temp reads a bit higher though. 2) I just...

    First Brisket Nerves

...260F+ you can use temp as an indicator. But rely on a probe to determine when its finished. Poke it with a tooth pick or thin meat thermometer, probe will just slide in. It may be at 195F but the flat may not be ready. I sure to wrap in foil and then wrap foil again, and wrap in a towel...
