    Why is brisket so popular?

    I get as much out of a brisket as I do a pork shoulder. Chopped it can be used for so many meals and even if you mess it up a little, just chop it up and throw it in a pot of chili. I can honestly say, its not just a badge of honor for me.

    I would say starting at such a low temp is not necessary. I would suggest 275 straight though till probe tender. 8lb brisket should not take 12 hours.

    ...complain to much though as we get $3.79 unpeeled Tri tips a few times a yr. Last time I made T.T burger, it may have been better than my brisket burgers.. I do add a few big Chuck roasts to my beef grind for flavor. I also leave several pounds out before the second grind, for chili and such...
