    Is it okay?

I think it was in one of @jcam222 post about fermented hot sauce that he said to add the fruit after the ferment of you want the flavor

Butt in a new to me MES 30 Pro

Thanks for the input on the app. I wasn't super hopeful, but wanted to try as the screen is very dark. I'm sure an Auber is on the horizon. Unless I dig out a microcontroller and make my own first.

Butt in a new to me MES 30 Pro

Yeah, I think it was only used once or twice before. The inside was spotless. Need to replace the drip tray on the back as it's rusted out.

Butt in a new to me MES 30 Pro

After 8hrs, the temp alarm was going off at 204 and it was probing like butter. Out of the smoker and into a warm oven for a couple hours. After the rest, the bone pulled right out. This was a small but I bought a couple years ago, cut some csr's off of and stuck in the freezer. Pulled and...

A couple hours in. Starting to get some color. I've reloaded chips a couple times.

Butt in a new to me MES 30 Pro

Yes, one at the bottom for smoke and another at the top. I don't doubt it will do a good butt, but I love running the weber. This one is bluetooth, but the app won't even let me sign in

Butt in a new to me MES 30 Pro

My wife was at the Habitat for Humanity ReStore the other day and they had just put this beauty out on the floor. $125 out the door. I've been looking for one for a while, not so much for doing pork butt, but to increase sausage smoking space and at some point snack sticks, cheese and bacon...

    High Heat Cheese

I was going to say this too. Best results I've gotten have been from drying out the cheese in the fridge first.

Grill chicken wings with a diy "vortex"

Wings look great! I use the vortex about half the time I use the Weber. You can also flip it upside down and put the charcoal outside of it to make a snake for smoking. Very handy.

Trying To Decide Where To Re-Locate

Congrats on the move! Make sure all your utilities are set before the holiday weekend. Our last house we closed on Friday before 4th of July. Gas Co had removed the propane regulator on the tank, which we used for hot water. And the office was closed for the weekend. They could have come out for...

Trying To Decide Where To Re-Locate

We used PODS before on a move a few towns over. It worked well for us. Much nicer to have a few days to get the pod loaded up in your driveway than feel pressured to do the whole thing in a day or two using a moving truck. Much easier to get things in and out of as well since it sits on the...

Fair price per LB for pork belly

Amazing how close the sale price now is to the prices in 2015.

    Deal of the Week...

I've been wearing O'Boz shoes for several years now. Company is based out of Bozeman, MT but the shoes are made overseas. Very comfortable and they wear fairly well. The sole rubber is not super hard which makes for a good off-pavement shoe, but they only last ~1 year for me when worn on...
