10 pound recipe
10 pound lean burger or venison (85/15)

Hello to all,
Tough lesson to learn. I lived in MI a few years back and had a meat market by my work. They had "Hawaiian Sticks". They were the bomb. All the ingredients on the package mentioned was pineapple. I thought I would give it a try. Here is my FAIL. Still looking for a good recipe...
Hello everyone. I'm looking to make something different out of my next batch of snack sticks. I wanted to go more sweet and spicy with them, but I can't seem to find a suitable recipe. I don't want to add maple syrup to the ingredient list. I was thinking these ingredients to start.
.25 % Cure...

i like this recipe for the sausage
what if i substitute the type of peppers (jalapeno ghost pepper or habanero)
thanks for the recipe will be trying these as soon l as my #5 Lem stuffer gets here
now to check out snackstix
Yep, got burned once & that was enough for me as well....always grind my own pork for sausages. However, on snackstix or Slim Jims I now will use GB in the tubes but only the 93/7. Mix a 4# chub with 1 # of ground butt, stuff into 21MM casings and it's spot on for my taste. I have finally got...
Firstly, NEPAS is the Guru of Sausage IMHO so his detailed advice is spot on & I have done a few of his formulas with great success. Be that as it may, I have a difficult time adjusting my electric analog smoker to such precise temps and times. I'm a restless human, easily distracted by a beer...
Last set of pictures, wow what a day!
Sausages, reg. smoked cajun type! I have some in a pan cooking for supper, Mmmmm........ The lady down the road brought me from fresh cabbage today....... No, just going to have sausage and crackers for supper. Hell I am still full of gumbo from lunch...
Since I'm back home I decided to make up some snack mix to smoke & have for the big pinball tournament tomorrow. I just made a simple mix of Chex, potato stix & corn chips - no pretzels or nuts this time. I used my recipe again as always...
Here is the spice mix after shaking.
I use these...
If you want venison snak sticks use venison, use 70% venison and 30 % beef FAT. Tom Thumb (local grocery) gives it to me for free.
Better flavor and your recipe will be balanced correctly.
Commercial pork loin has no place in snackstix unless you can add like 50% pork fat to it. I think it...
First I must opalogize that I am not posting any q-view with this question. I'm not proud of what I have been attempting.
I have been trying to develope my own recipe for making beef / venison snackstix. I have been mixing up approx. 1/2 pound of meat at each try so I don't have so much to...
Good Evening Bear, I will be using your recipe in the very near future. Yours sound and look awesome.
Kinda funny, I have been working at developing my own recipe from my off the shelf seasonings. In doing this, I have been planning to use my jerky canon and extrude the stix into casingless...
I gotta tell you Bear, that recipe of yours is laraipin' good. I substituted chipotle powder for the cayenne, was the only change I made, but definetly will be keeping this recipe to go to for beef snackstix. Thank you sir, for sharing the recipe.
Making a statement like this can be dangerous. if someone is using cure #1 and they listen to your post they will be treating 1 pound of meat with enough cure to treat 25 pounds of meat! That is why I commented and said I hope that was a typeO. I just wanted to make sure you weren't misguided...
Thank You Sailor!!!
Gotta keep them boys Happy!!! Glad they like them.
Bear
Hi Rich!!! You'll love this recipe!!
However these are very mild. If you like a little heat, use the ingredient amounts in my "Bear Loaf", instead of this one. I'm not big on a lot of heat, but the heat of the Bear...

I was wanting to do up a batch of uncased snackstix for the Memorial Day weekend festivities and thought that Bear's recipe for his unstuffed beef logs would fit the bill. So I made up a 7 lb. batch and squirted them out of my Dakotah stuffer onto trays and racks to chill over night and be...
Man, those look awesome!! You could give that butcher in your town a run for his money. I bet they taste as good as they look! I can't wait to give it a try. Would you mind sending me a recipe for the Jalepeno Pepper Jack SnackStix?? It looks amazing.
I can't help myself....I have to try another SnackStixrecipe.
