Wow this looks amazing! I love me some DisneyTurkeyLegs, I will have to give this a try! Out of curiosity, after you vacuum seal and freeze your legs, how do you reheat them? Is there a big flavor difference? How long do they last frozen?

Here's one I found that is pretty darn close.
SMOKED TURKEYLEGS close to Disney Style
The brine:
2 cups tender quick salt
1 cups brown sugar
2 tbsp. onion powder
2 tbsp. garlic powder
4 bay leaves
2 gallons water
6 turkeylegs [totally submerged in brine]*
Sweet paprika
Mix all brine...
...Hydraulic Oil bucket. ( The residual in the bucket should keep you regular. Always an issue with old guys like you n me)
