Weldingblanket from Harbor Freight is the most common hack for that. This might sting a bit but can you possibly return it? I'd much rather have one of the digital models that's insulated. TONS on FB Marketplace cheap here and probably even cheaper now that TG is over. :emoji_laughing:
When I was at Harbor Freight getting a weldingblanket to insulate my pellet grill, I picked up this pair of stainless steel shears. I think they will be perfect for spatchcock chicken/turkey.
I have a knock off Traeger made by Masterbuilt. I make it work. Weldingblanket in cooler temps.
It is a heat source. I use a smoke tube to make it a smoker. I do not use it for grilling as it is not a grill.
My kettle is a grill.

The weldingblanket sounds like a maybe since it’s pretty inexpensive. Would I just lay it over the top? What do you do with it when you gotta open the lid? Does it get too hot to touch or do I need a pair of fire gloves to mess with it?
Have ran mine down to -15°. Weldingblanket on helps but will still eat a lot of pellets. Opening only once start to finish is key because of the recovery time.
...the pellet grills will/should work to pretty darn cold, but the insulations helps a ton. I use it fall to spring.
Many use weldingblankets they are quite affordable and I suspect you could cut it down and customize it? just guessing.

Its currently sitting at 270 on full tilt in 40 degree weather with no wind shield.
The amaze pellet smoker it churning away pretty good too.

Got it prepped, and into the GMG Daniel Boone at 225°, with a weldingblanket on top, because it's 49° outside and a little windy. Can't remember who came up with this, but I'm using a modified tube pellet smoker, so thanks...

I also filled the water dish with sand, and ALWAYS KEEP THE TOP VENT WIDE OPEN.
On cold windy days, a weldingblanket wrapped around it will fix any problems with heat retention.

Think I have my Pecos pretty dialed in with these mods:
-Lavalock baffle tuning plate
-12x6" double walled stove pipe for the stack
-Weldingblanket over the cook chamber
-BBQ gasket on the cook chamber door edges
-water pan (1/6 pan half full)
-Telltru thermometer

...swapped the heat element in my MES 30 for one made for a MES 40--cheap and easy. You can also wrap your MES up in an inexpensive weldingblanket for extra insulation. You'll be smoking just fine in weather that's too cold to be out in.
