Yep I fully agree with the searing. Assuming you already have a typical gas grill, you will get a much better sear with that. So yep, I typically do a reverse sear for steak, tri tip etc.

Yeah @normanaj is completely correct!
The PID would be cutting power Off to the entire MES. That means no power to the controller and heating element so it is effectively unplugging the MES.
Then when it turns power back on, I believe the MES is no longer set to be "on"...
I have found that with my pellet smoker opening it doesn't really add much time, the burner kicks on and back to temp in nothing flat, that's not how wood burners work as it can't ramp up or down easily or quickly. It's rare I wrap as it's tough to build smoke flavor without spritzing or a tube...
I've got an a-maze-n tube that I use to supplement smoke in my pellet cooker. But it is far too small for this cooker. I can easily fit a 100 lb. whole hog split on this cooker, so it's a large chamber.
