Thanks Ryan. I would always clean my deer heart, cut in half, and run it through the cuber 1 time. Then I would fry it like cubed steak. After this and what @crazymoon moon posted, I will trying some new things with them...

I have found that squirrels, wild d turkey, ducks, pheasant are too lean to smoke for long periods of time. I have brined them and then cold smoked them and them used BBQ or oven to cook.
Cute pup and a nice spread of birds! I've done bacon wrapped pheasant very similar to this : http://foodbreeze.blogspot.com/2016/10/smoked-pheasant.html with good results. It's also good after cooling served as an appetizer.
If you want to keep it simple brine them overnight (which is best) or at least 4 hours if you're in a rush in this basic brine which is.
1-gal water.
1/2- cup kosher or sea salt.
1/2- brown sugar.

Try some venison, elk, bear, squirrel, grouse, pheasant. Heck, go for a mountain man smoked meal, coon or possum with a side of grits with some of that smoked cheese you got, for a good cheese grits. An don't forget the collard greens.
