Not a fan of Inkbird (the equipment is ok, my gripe is with tech) but the sealer does work. They made me jump through hoops to warranty the first one out, but they eventually did. It's a simple sealer, compact and lightweight. About 50 bucks on the gigantic online emporium

I'm a fan of ThermoPro. Get a 2 or 4 probe and you'll be glad you did. ThermoWorks is a sponsor here and very high quality. InkBird is another option on the value side.
Normanaj,yes that's it,its not that it doesn't sit flush,it does,it's just the intake on the adapter doesn't line up directly with the hole on the smoker,I'm not even sure if it's a problem, maybe it's designed like that to deflect a direct blast of air?.

@Inkbird probe and timer was a big help on the rotisserie,
And the ladies were good with it also.

Setting them up on WIFI is sort of a pain. My router in the barn got fried in a recent storm. I had to get my ISV-200W manual out to get it connected to the new router.
Other than that, I have had zero issues with my Inkbird SV unit.

No the ITC-308 Inkbird controller is for 1,100 watts max with a 248*F max at that wattage and the Mes 40 has a 1,200 watt heating element. You'll need something at a minimum of 1,500 watts, 12 amps with a controller that senses and displays 275*F . Will Hi on Amazon had one I believe WH-1308B...
