...also use a counter weight to help balance it out (far right in the WSM pic.) I'm fortunate enough to have plenty of room in the WSM 22" and the Yoder 640. I can actually do 2 whole chickens at the same time in the Yoder.
If space for spinning is a concern, is Spatchcock an option?
I...
...any?
Basic rub combo: Texas rub (my version) 1/2 cup course Kosher salt, 1/2 cup black pepper, TBS garlic powder, TBS Onion powder.
Into the Yoder 640 filled with Lumberjack Pecan blend & set at 230°. This Signals set up has been stashed in a drawer for years. So I get it plugged in set up...
Welcome from Junction City, OR! I've gone through a couple propane vertical cabinet smokers and just recently moved to my first pellet pooper, a Yoder 640S. I figured if I'm gonna go the pellet route I'm going all in and it's one of a very few that get to searing temp so I can put away all the...
...management practices I’ve read about, some better than others but nothing still great in my opinion.
Way back when I remember reading how yoder made the firebox to cooking chamber openings way to big and there was some discussion about closing the gap up, but now when I google search I...
...also. If you want to fiddle a little bit you can get a Weber Charcoal grill (26") or a WSM as mentioned above. Use charcoal and chucks of wood easily available at ACE or HD etc. Keep looking at CL or Marketplace for a used Lang, Bellfab, Yoder etc. You can save a bit of $ going that route.
...dozen briskets overnight. All but the first 2 were on my pellet cooker. The offset overnighters were a pain in the ass with my offset but this Yoder makes it easy.
I was up every couple of hours with the offset but I sleep all night with the Yoder.
Everyone is making good points and...
...some sausage got more smoke than others. You can see the darker color in the raw stage on some. You need air flow when cold smoking. If I do this in my Yoder 640, I can turn on the fan without lighting the grill. This airflow helps a lot. I most always warm smoke to color then SV or poach finish.
Thanks for this review, unfortunately, you've only made my decision harder! LOL. The Yoder seems like a more proven long term product, but the Lone Star (at least in the videos I have seen) seems to put out WAY MORE smoke. Yeah, the Yoder rusts but I'm fine with that. I can get the Yoder by next...
Testing out a different way of using my Yoder YS640 as a cold smoker and thought why not throw in some cheese! Already had a 5 pound block of Cooper Sharp White American and cut into 8ish oz chunks. Will give it 6 hours or so and see how it turns out in a couple of weeks.
I have both a Lang stick burner and a Yoder 640S pellet smoker. I tend to use the Yoder more frequently due to the convenience of not having to baby sit it and set and forget. It will give you some good eats and gets hot enough to cook wood fired pizzas too. That being said, the Lang produces...
...out there for free on a daily basis.
For the record if I decided to cook a brisket or a butt I could break out my Smoke Hollow or my Yoder and end up with the same results with a Taylor dial thermometer, honestly would probably turn out better with the SH as I have more time invested in...
...lower end. More and more I look though it seems like the good USA made ones are all really solid choices and all 1800+. I'm kind of leaning towards just saving for the Yoder. It has a really good reputation and seems like it will last damn near forever.
Thanks for sharing your experience though!
Two weeks into owning this Yoder 640S and I've now done ribs, ABT's, whole chicken, stuffed burgers, tri tip and now some chuckie burnt ends. I should of got pics of the tri tip, that direct grilling option on this Yoder is amazing. I was hitting near 800°F at the grates for the sear.
First...
...their suggested shut down procedure is. That shouldn't happen at any temp. I've always heard Rectec's customer service is top notch.
I've had a Yoder pellet smoker for a while now and the instructions for it were specific to say always leave the lid closed during shut down to prevent burn...
I don't have a fan on my WSM so I'm not sure how that will affect the process. I use apple dust instead of pellets. Dust gives me a cleaner smoke. With dust I went about 3 - 4 hours on this one. I'm not into the heavy smoke flavor either.
In the fridge. If you freeze cheese it will change its...
I am looking at the backyard jambo pit. It looks like an excellent smoker. I have a Yoder Wichita and not liking it. I had a good resource tell me Yoder smokers was not any good in a polite way.
...Avocado oil
modest layer of AP rub
second layer of Brookshire's 903 seasoning (3 salts & 9 peppers according to the label 🤷♂️)
Fired up the Yoder 640 with 100% hickory pellets and set it for 225° - Into the tank!
Made up a braise with:
2 cups beef broth
1/2 yellow onion coarsely chopped...
