Got my new grinder today. I had also purchased two new LEM salvinox knives. One to pair with each plate. Is the knife that was included with the grinder different? I just figured I'd save it for backup or pair it with the kidney bean plate....which I'll probably never use.

Pairing the knives and plates is not as important as you might think. It’s a fine practice but really not necessary if the knife and plates are all true and flat.
Give it a try.
I tried it a few times before I bought a dedicated stuffer. Dedicated stuffers are so much faster and they make it much easier to produce quality sausage.

I did the same thing... have a 1 1/2 hp Cabelas grinder we use when grinding deer burger and bought a number 8 Lem for small batches. It works good for that. Noisier than I expected but it's not terrible.
