    Sandwich Size Pepperoni Ideas?

So update time. This is a go and giant chubs are in the smoker getting 3 hours of 100% maple (2 rows at once in AMNPS) before they go for the SV bath. @Hijack73 and @chopsaw thanks for giving the awareness to address the salt in the muffuletta olive salad mix. I had them drain for about 3.5...

MES with Cold Smoker Attachment -- Am I doing it wrong? Ways to not smell like smoke?

...so, how?" I've been thinking of approaches like adding a fan to move air and/or a dimmer switch to reduce power to attachment and/or sticking a AMNPS tube in the attachment somehow and having it light through the attachment power, etc... Any thoughts? Also if there's tips on not smelling...

    First Pork shoulder

...are 8 hours in now. 8 hour update. Ribs have been in 6 hours. Still need another hour or so it looks like. Butt just got to 160 so I put it in a foil tray with a rack in it and wrapped it in foil. Took a little chef snack that was hanging off the smoker rack. Man was it good. Loving this...

    Need help with MES

...to be able to effectively hit the food circulate and leave the smoke before it becomes stale. I cold smoke in my MES using the mailbox mod and AMNPS tray and had some unwanted stale smoke issues. It didn't ruin things but also was not desirable. So I whipped up a little cold smoke draft...

    Need help with MES

...less visible the better because it means its clean. The pellet tubes are known for putting out heavier smoke vs the A-Maze-N Pellet Smoker (AMNPS) tray, which also can do up to 12 hours of perfect TBS for you. So to me it sounds like too much bad smoke or lingering stale smoke due to not...

    Educate me on "smoke" please

...think you are getting some good feedback so I'll throw my 2 cents and my experience in here. I run an MES (electric) with a mailbox mod and an AMNPS pellet tray. With normal smokes the pellet tray produces perfect smoke whether it's thin blue or light white etc. It is never thick heavy...

Lookin good! Also feel free to crank that smoker up to 275F. Those cuts of meat don't care if you smoke at 275F. It will get you to your completion time faster too :)

MES with Cold Smoker Attachment -- Am I doing it wrong? Ways to not smell like smoke?

What temperature are you running your smoker while generating? And what is the reason for coming out of the gate with a lot of smoke? You must like it, but hate it at the same time, it seems?

That elusive TBS, how do you get it in your smoker?

I use the chip tube feeder on my MES40 for short smokes (2 or 3 hours, or less). Only use 4 or 5 chips each time I add chips. Typically add a few chips every 20 to 30 minutes. For longer smokes, I use the AMNPS. I never use water in the water pan...it functions as a foil wrapped drip pan.

new smoker any help and info appreciated

...above the element. My thoughts are that it would be kind of nice to do the equivalent of a "mailbox mod" and use the A-Maze-N Pellet Smoker (AMNPS) tray to produce 12 hours of perfect smoke that goes into the cabinet there. Now while fabricating and assembling would be a good time to sort...

    Help, Need another AMNPS

...her how to use it. First step I need to make a mailbox mod for it. Should have everything in my garage. The one thing missing is a spare 5x8 AMNPS tray. I think the brand was sold but not sure to who. A little afraid some of the ones I see on-line maybe knock-offs and would rather get the...

    Fed up!

...you do so. I've been using one with my MES 30 for years and would never go back to trying, and failing miserably, to be able to put the AMNPS inside the MES and have it stay lit.. I nuke the pellets for 2 goes of 2 minutes each, then load them directly into the AMNPS--they're still hot...

    Bella Cold Smoke Generator

...other things...but it's now turning cooler again I want to take another swing at this. I'm tired of fighting with my mailbox style mod / AMNPS and ashtray tasting cold smoke. I'm going to try another way of generating smoke for my MES 40, but I think that is going to end up being more along...

    Fed up!

Guess I need to look into this. For what it's worth I light pellets in the AMNPS and let it burn for a few minutes, then blow it out, then blow on it again to get fire again, and repeat a couple times. Then into the MES. Maybe the mailbox is my only option. I'll do a search, or if anyone has a...

MES 40 with AMZNPS maze issues

Consider a mail box with dust. Mailbox allows you to check on your AMNPS, change pellet/dust flavors without opening the smoker.

    Fed up!

I'm getting to the point where I can't deal with my MES40 anymore. I'm so tired of babysitting it to add chips every 30 minutes. I use an AMNPS, but getting that thing to keep smoking and not go out is a chore unto itself. Love smoking, but this is making me crazy. Currently have a brisket in it...

Welcome. A pellet tube inside or the amnps will give you more smoke. https://www.amazon.com/MAZE-N-Pellet-Smoker-Smoking-Works/dp/B007ROPJ1M https://www.amazon.com/MAZE-N-Pellet-Tube-Smoker-Design/dp/B00CS6YFIC

    Fed up!

If you have a MES40, just add a mailbox. Once established, add a AMNPS pellet grate to the mailbox. Some holes in the mailbox and it's door might be needed. Have never needed to heat the pellets for more than 5-10 minutes. So very simple.
