8 hour update. Ribs have been in 6 hours. Still need another hour or so it looks like. Butt just got to 160 so I put it in a foil tray with a rack in it and wrapped it in foil. Took a little chef snack that was hanging off the smoker rack. Man was it good.

I run an MES (electric) with a mailbox mod and an AMNPS pellet tray.
With normal smokes the pellet tray produces perfect smoke whether it's thin blue or light white etc. It is never thick heavy...
Lookin good! Also feel free to crank that smoker up to 275F. Those cuts of meat don't care if you smoke at 275F. It will get you to your completion time faster too :)
What temperature are you running your smoker while generating? And what is the reason for coming out of the gate with a lot of smoke? You must like it, but hate it at the same time, it seems?
I use the chip tube feeder on my MES40 for short smokes (2 or 3 hours, or less). Only use 4 or 5 chips each time I add chips. Typically add a few chips every 20 to 30 minutes.
For longer smokes, I use the AMNPS.
I never use water in the water pan...it functions as a foil wrapped drip pan.

My thoughts are that it would be kind of nice to do the equivalent of a "mailbox mod" and use the A-Maze-N Pellet Smoker (AMNPS) tray to produce 12 hours of perfect smoke that goes into the cabinet there.

...you do so. I've been using one with my MES 30 for years and would never go back to trying, and failing miserably, to be able to put the AMNPS inside the MES and have it stay lit..
I nuke the pellets for 2 goes of 2 minutes each, then load them directly into the AMNPS--they're still hot...

For what it's worth I light pellets in the AMNPS and let it burn for a few minutes, then blow it out, then blow on it again to get fire again, and repeat a couple times. Then into the MES.
Maybe the mailbox is my only option.

I'm getting to the point where I can't deal with my MES40 anymore.
I'm so tired of babysitting it to add chips every 30 minutes.
I use an AMNPS, but getting that thing to keep smoking and not go out is a chore unto itself.
Love smoking, but this is making me crazy.

If you have a MES40, just add a mailbox. Once established, add a AMNPS pellet grate to the mailbox. Some holes in the mailbox and it's door might be needed. Have never needed to heat the pellets for more than 5-10 minutes. So very simple.
