My old MES I sold years ago to help pay for my Camp Chef Pellet Smoker since I have also sold due to space constraints.
This one is a new one that I am going to set up with the PID Controller and a Smoke Generator so I don't have to fool around with a Mailboxmod.

What are your variables set to? Does your light on the auber flash or stay on constantly? The out of the box setting I believe P=7, I=600 and D=150 was no good for my Mes 40 as well as autotune no good. The auber would flash 20 degrees below set temp and will never get to set temp with 3 ribs...

This my friend is easily remedied by the use of an Amazen tray(maze) or tube.These two items when used can produce up to 10+ hours of uninterrupted smoke.Both burn pellets and/or pellet dust.You can put either one in the smoker or use the "mailbox" mod.
So i've personally never done the mailbox setup but it often has to do with two things:
1. The movement of the smoke within the chamber.
2. The maze and tube both generate heat - which people are trying to avoid.
What can happen in the MES is "stale smoke" meaning no air movement - this ends...

Yep, need at least 200° to get chips to smoke. Like stated, A tube will do you wonders at lower temps. Been there, went to mailbox mod ( search forum ).

I’d give it a test run on a smaller batch personally-maybe I had bad pellets or odd weather or something.
