No Jim,
My old MES I sold years ago to help pay for my Camp Chef Pellet Smoker since I have also sold due to space constraints.
This one is a new one that I am going to set up with the PID Controller and a Smoke Generator so I don't have to fool around with a Mailboxmod.
John
Nice Job! I have the original 12" round Amazen tube smoker AMNTS and the 5"x8" Amazen pellet smoker AMNPS. I use the AMNPS mostly in the mailboxmod with my Mes 40 and 30 smoker and is a lighter smoke than the AMNTS. If lighting both ends of the AMNPS some folks just light the middle of the...
Just picked it up on Wednesday, hopefully we can try and cleaned up next weekend and fire it up. As of right now looks like they just used wood and charcoal and closed the lid and let cook away. Grandparents had old like bbq pit so we are thinking about building pit back up and run pipe from...
This is exactly what I did on my first cook the other day as I didn't want to go full mailboxmod. That's what led to my initial question. Only thing I could think of was what was discussed above. Cleaner smoke, easier to handle pellets without opening cooker, etc.
...tray, nuked the pellets like I've read about here. I've tried using dust. Also something I've read from here. I have also tried the mailboxmod for my Bradley, but it doesn't seem to help.
I've also read about how it's the air flow that matters. How can I get the bradley smoker to give a...
...and fish starting 130 etc but anything else I want the controller 100% on, flash one degree below set temp and off at set temp with my mailboxmod and exposed element cooking at 265-275 with ribs, butts and brisket. The exposed element doesn't have as much hysteresis of over/under shooting...
...pulled some stuff out that I don't think are needed. I also have a Masterbuilt smoke box attachment (MB20100112) that I opted for instead of the mailboxmod. I think I can plug that into the Auber with an attachment plug instead of another direct power source? I have a lot of experimenting to...
First hello and welcome!
This my friend is easily remedied by the use of an Amazen tray(maze) or tube. These two items when used can produce up to 10+ hours of uninterrupted smoke. Both burn pellets and/or pellet dust. You can put either one in the smoker or use the "mailbox" mod.
So i've personally never done the mailbox setup but it often has to do with two things:
1. The movement of the smoke within the chamber.
2. The maze and tube both generate heat - which people are trying to avoid.
What can happen in the MES is "stale smoke" meaning no air movement - this ends...
Have you verified your actual temps inside when you are set at 200° ? When I did use chips ( before smoke tube, and mailboxmod) I would have to have it up to about 210° before it would get smoke out of the chips. That was just to hot for doing sausage or jerky. Just a smoke tube could be a...
...attachment and just used the factory chip feeder.
Sticks turned out great with good flavor-probably need to ditch the cold smoker and do mailboxmod instead.
There was a few instances where the whole smoker was completely full of heavy smoke-I ended up opening the door to let it clear.
Is...
...you might have ways to just add wood splits/chunks, etc. without much modification.
Also I'd be curious if adding something like a MailboxMod with something like the A-Maze-N Pellet Smoker (AMNPS) pumping out perfect smoke lol. The AMNPS may not be enough for a giant this size but the idea...
...at zero degrees to just buy a new smoker as I smoke every week.
Now that a little history is out of the way, I don't want to perform the mailboxmod... I was looking to just buy the masterbuilt smoke generator but apparently they don't ship here and are back order forever.
I have seasoned...
Yep, need at least 200° to get chips to smoke. Like stated, A tube will do you wonders at lower temps. Been there, went to mailboxmod ( search forum ).
I order my sausage making stuff from sausagemaker.com... My question is.. they only 19mm casing they have is a clear/smoked casing.. I wanted to do snack sticks but always used mahogany.. The clear casings when its smoked should have a nice beautiful color on the snack sticks? I'm looking for...
I hope that's where the mailboxmod will help out. Right now I have the puck burner attached to my Bradley and a pellet tray in the bottom where the water bowl would go. There's enough airflow for burning pucks, but that tray put out a fair amount more smoke tonight.
I guess I need to find a...
...the puck when it gets pushed out.
I have used a pellet tray in it using the same pellets that I use in the Traeger.
I have used the mailboxmod with the pellet tray
I've scraped out the buildup inside the Bradley and wiped it down.
I have tried turning the pellets to a dust in an attempt to...
...to figure out a way to cold smoke. I was really hoping it would be as easy as putting one of the pellet tubes in the bottom and letting it go. So the reason for the mailboxmod is purely to get cleaner smoke? Hate that I have to do all of these modifications. PID controller, mailboxmod, fan...
I’d give it a test run on a smaller batch personally-maybe I had bad pellets or odd weather or something.
Seems like mailboxmod is best way to cold smoke.
