Ok as many know I have the MES 30 with the arbor pid- it works great - for 10 lbs or less.
I’d like to be able to smoke 20 lbs at a time. What would be a good step up and still use the pid?

Yes the TC would sense the flame and if it blows out would shut off the gas supply. I read that thread yesterday and should be a great help. Inda, I like that bypass idea. Should be able to add a needle valve to control the low flame on the loop around the valve controlled by the pid.

Did you use the Pro Mode using the cook?
Pro mode is the SMOKE Mode.
If it says PID, you did not use the PRO mode.

Time to get an Auber PID and bypass all the electronics on the controller panel. Will make a much better smoker for you with more controllable temps.

Best additions I added to the Traeger Eastwood were an upper rib rack and Grill Grates. If you're not familiar with Grill Grates, check them out. You can replace your existing grates or just lay them right on top. Great heat diffusers.
