I agree that bacon doesn’t get as crispy- what i have found is if I pull it a bit before temp and put it in the oven for 15 min or so it will crisp over and keep the juice in. As far as smoke flavor I haven’t had any problem getting smoke to the meat .
Just bought one today for my girlfriend so I can smoke when at her house .. I'm use to my big smoker so this is a learning curve .. QUESTION: where is the dang smoke!!?? I soaked chips as it suggested dumped to loads in, I can smell a sweet flavor between the hickory and cherry but no smoke...
