Found this just in time.I had two bb racks in the electric smoker. I started following the 2-2-1 method and they seemed done after 2 hours unwrapped and 2 hours in a foil pan with beer. Found this thread and realized I smoke everything else to IT, so checked and sure enough they were at 195. I...- unstoppable

Temp controller for a new Smoke Hollow 30" elec.
I've had the same experience with this unit. Sad we didn't research it further before purchasing. I'm going to attempt to drill some additional ventilation and add a damper. Hopefully this will allow me to control the heat better. Ill let you know how this goes.- unstoppable
