    MES w/ mailbox vs Recteq

What about my size question? I have a 30 to rewire, but to fit I have to cut ribs in half and either separate a brisket, point and flat, or set up the grates to put it at an angle. Will ribs and a brisket fit whioe in a 40?

    MES w/ mailbox vs Recteq

If a rewire is done and a PID used, does it matter if the MES is a Gen 2? Also, is there any real danger in eliminating the safety limit switch when using a PID? Can a whole rack of ribs or a brisket fit in 40? There’s a used Gen 2 40 in good condition available where I am for $40.

    MES w/ mailbox vs Recteq

I have been a long time user of an MES w/ mailbox & AMNS tray and would continue if MES would make a product that lasts more than a year or two. I’ve gone through a couple and have had to fix those to keep them going (replace burned out blade connectors, replace element, replace controller). One...

Help! - Brined Pastrami Too Spicy Hot

I have brined a brisket flat for 6 days, intending to follow Jeff's instructions. I did my own pickling spice mixture according to Michael Ruhlman's recipe, but I mistakenly added way too much crushed red pepper. I realized this too late and hoped it wouldn't make that much difference. When I...

Ref; Question on Baby Back Ribs..

I would suggest 2-2-1 or 3-1-1 with BBR. I would put rub on right before, not overnight. Overnight the salt will draw liquid out of the meat and you'll see it all in the AM. You want that moisture staying in the meat. Mustard isn't necessary. It's mainly to help the rub stick and helps...

My Mailbox Mod Brings Down Temp in Smoker

    1. Yes, TBS, not TWS (thick white smoke ;)). 2. Full AMNPS smokes for 10 hrs. 3. No significant wind to be factor.

My Mailbox Mod Brings Down Temp in Smoker

I used to have it set up like this. Then I noticed most guys have the smoker up higher than the mailbox, so I thought maybe there was something to that. So, I raised it up [see previous pics]. It doesn't seem to have made any difference. Notice this is my old smoker that now serves as the...

My Mailbox Mod Brings Down Temp in Smoker

Perhaps my problem includes the measly 800 watts my 30" MES has?

My Mailbox Mod Brings Down Temp in Smoker

OK, so here's my set up. the two holes are are 1". I've tried covering them halfway with tape and that helped a little. What I don't understand is, if the air /smoke is moving into the smoker and out the top vent as it should [draft?], how could it NOT bring down the temp. inside the smoker...

My Mailbox Mod Brings Down Temp in Smoker

I have posted a few times about my MES taking forever to recover and such. I have diagnosed that my mailbox mod set up brings down the temp inside the smoker significantly. The smoke is flowing out the top vent so it seems the air is moving in the right direction, mailbox to smoker, but the...

Shouldn't MES Heating Element Glow Orange When Heating?

The one that came in it didn't ever get hot enough to glow at all, it gets hot, but stays black so it's not getting very hot. I switched out the replacement they sent me, and it's the same thing. It heats up, but not hot enough to glow, it too stays black. So now we tried the digital...

Shouldn't MES Heating Element Glow Orange When Heating?

I've been having trouble with my new MES 30. It takes forever to recover after loading it [I don't overload it]. Like 1.5 hours to recover from 150* back to 230*. Masterbuilt first sent me a new digital control. That made no difference. Now they sent me a new heating element. I haven't...
