Good Source for Meat - SF Bay Area

We only have a Sam's here in central, Missouri, but one call to the butcher shop at Sam's, make a request, pick it up tomorrow. With one exception, I have always had great luck with them. They will even sell me just a point off of a whole brisket...just ask.

    Took a stroll this afternoon

Best pic I saw all day! Thanks for posting. I trapped 21 raccoons and 4 possums this season on my 123 acre farm. The old record was last year when I trapped 24 critters. How in the heck do turkey hatches even survive?! Coyotes and bobcats managed to avoid the sets we had for them...but...

5.5 Inch German Bologna (Venison) Smoked then SV with QView!!!

That sausage looks about prefect. Congrats on the carousel ride too! You are a brave man trying the 5.5 inch chubs. I usually stick with 3.0 or 3.5 inch chubs when making sandwich sized sausage. I totally get why you are trying the larger diameter though.

    A couple thick strips please!

Strip and rib-eye steaks are my go-to steaks and I would definitely "go-to" your house and eat a hella-plate-full of that fine looking meal!

Chorizo or Sausage? Help a newbie!

Welcome to SMF from central Missouri. You had a lot of great responses prior to this post. FWIW - I make a lot of small-batches (5 to 10 pounds at a time) of sausage. Brats, summer sausage, andouille, breakfast, etc. I also make chicken sausage(s) for a friend who has alfa-gal syndrome (can...

    It Was A Crappie Day...

I have some crappie areas in a couple of lakes on the farm...rarely fish for them though. But they taste so darn good. Seeing your pic's is going to make me make some time to fish for them. Never tried the roe before...any sort of recipe?
