We only have a Sam's here in central, Missouri, but one call to the butcher shop at Sam's, make a request, pick it up tomorrow. With one exception, I have always had great luck with them.
They will even sell me just a point off of a whole brisket...just ask.

You are a brave man trying the 5.5 inch chubs. I usually stick with 3.0 or 3.5 inch chubs when making sandwich sized sausage. I totally get why you are trying the larger diameter though.

I have some crappie areas in a couple of lakes on the farm...rarely fish for them though. But they taste so darn good.
