It's a great all around smoker that performs exceedingly well.
I smoked a couple 5# chuck roasts over the weekend. Temp was 225. I left them unwrapped until I was happy that the bark had set (165F at 4 hours), and then wrapped them. They were probe tender at 204, and 7.25 hours, total. Rest period was another hour.
I stock up on Kingsford Blue Bag when it's on sale, generally around holidays.
I've experimented with other brands, but found Kingsford to be more consistent with heat output and burn times.

I solved the issue by adding a $20.00 piece of expanded metal to the top of the burn grate. This prevents hot coals from falling to the bottom, which in turn keeps a nice coal bed available to the fuel the fire.

I wanted one in the worst way, but the Gen I disaster made me gun shy. Even though the Gen II was introduced, I purchased a Rec Teq RT-700 and haven't looked back.
I purchased the cover and the front shelf, and I'm happy with both.
The cover requires a little patience when putting it on, and removing it, but it does fit.
I see no reason to cook without the heat management plate. It does a good job of spreading out the heat in an even fashion, without inducing any problems.
I'm on the opposite end of the spectrum. I lit my Summit yesterday, at 8:00 AM. After smoking a brisket, I just let the smoker run. At 10:00 AM today, the thermometer is still reading 250 F ! LOL

I recently smoked 4 racks of babybacks for out of town friends, too. I did mine on my Yoder Wichita, and they came out great.
It looks like you have an RT-700. I haven't smoked ribs on mine, yet. It's relatively new.
