Turns out it wasn't dry at all. Must just me being critical. Everyone thought it tasted great. Mom had made an oven baked and I smoked one. The gravy from the juices too was awesome. Nice smokiness to add to the flavors. Now to eat the rest for 4 more days! Excited about this new smoker.

I just did a 12 lb turkey in my MES at 275 in about 5.5 hours. It ended up at 175 when I pulled it. I really need a good thermometer that can monitor it. I went a little higher than I anticipated.
