I have the largest Cabela's, with 28 trays. It works great. I can't wait to move and have my toy barn kitchen, and buy a few more of them. I don't get a lot of free time. So, I start out with 100lbs of meat. I would like to start with at least 200lbs or more. Yeah, I have a big family and a lot...
Good morning, I hope all had a wonderful Thanksgiving!!!
Since I have a couple days off I figured i would make a big batch of jerky. Tuesday after work I picked up 100+ lbs of black angus eye of round. Wednesday after work I started trimming then slicing it. I ended up with approx 10 lbs of...
I still don't understand cutting with or across the grain. I keep thinking in 3 dimensions. I use eye of the round, and slice it with a meat slicer, so there is really only one common sense way to slice it.

I figured the longest I will have some marinating is most likely 36 hours. Enough time to make three 30+lb batches if I start out with 100lbs.
Do you think that is enough time...
I was wondering what would be the maximum marinating time for jerky? I use eye of the round, and a liquid/spices marinade. The reason I ask is because my dehydrator will handle about 40 lbs of meat. Over the holiday time, I want to start out with 100 or 200 lbs of meat, so I can vacuum pack it...
I make jerky starting out with 50+ lbs of meat. I was wondering about what size, in grams, desiccant packs I should use? I am packing ziplocks between 1-2 lbs, and vac sealing 1-2 lbs. The ziplocks I give to buddies for immediate consumption.
Hello everyone, I just joined looking to discuss jerky making. I've been making it for a couple years now. I started with a small round dehydrator, moved up to double oven, and now just received the largest Cabela's dehydrator for fathers day. I like to think go big or go home!!! lol So I start...
